New Chef Collab! Mike Solomonov x Farmer's Fridge

 

James Beard Award-winner Chef Mike Solomonov has been named a beloved champion of Israel's extraordinarily diverse and vibrant culinary landscape. Born in Israel, this Philly-raised chef has made waves for bringing a major slice of Israeli food culture to the area through his village of restaurants across the city. If you’ve been to the James Beard awarded “Outstanding Restaurant” Zahav, (or Federal Donuts, Dizengoff, Abe Fisher, Goldie, K'Far, Merkaz, or Laser Wolf), then you already know his work. 

It’s easy to see why we’re thrilled he wanted to step in and chef it up for our Fridge Fans! ​​His restaurant Zahav has earned him accolades from Bon Appetit, Food & Wine, and more, making it onto several Best Restaurants lists. Not to mention, he’s won the title of "Outstanding Chef," an award for International Cooking, and even "Book of the Year" for Zahav: A World of Israeli Cuisine – a cookbook based on his restaurant. 

 
Get to know: The Shawarma-Spiced Cauliflower Salad – Straight from Merkaz, Solomonov’s Israeli Pita Sandwich shop and café in Philadelphia! The star of the show, cauliflower, is roasted in Chef Solomonov's beloved spice blend. Paired with peppers, onions, cucumbers, and tomatoes topped off with creamy tehina green goddess dressing. That means this salad sneaks in over two servings of vegetables! Bonus points? It's vegan!

Merkaz decided to introduce salads to their menu last spring—simply prepared like their overstuffed sandwiches and with a nice amount of spice–and we’re so thankful it led us to this Chef Collab. When asked why he chose this dish for our collaboration, Chef Mike said, “because it is the epitome of a salad that does not sacrifice on flavor,” a notion that we understand all too well at Farmer’s Fridge.

Q: One kitchen tool or gadget that’s a must-have for you?
A: I always like to have a small offset spatula (not just for schmearing frosting!) and a good spoon.

Q: What do you like to do when you’re not in the kitchen?
A: I surf as much as I can, mainly at the Jersey Shore. Quick story: I remember my first time surfing years ago. I was hungover and therefore miserable, it was ridiculously early, and in the end, we ate Brown's hot donuts, which turned it all around. Those donuts are incredible and have become part of the routine ever since.

Q: Favorite meal to make at home?
A: I go through phases, but at the moment, I'm making bolognese a lot. My kids are very excited about fusilli right now, so it's a great meal for us to have together. There's nothing more satisfying than getting my kids to actually enjoy my food!

Q: One ingredient that is ALWAYS in your kitchen?
A: A can of crushed tomatoes. There is so much that you can do with a simple can of crushed tomatoes.

Q: Any tips for the home chefs out there?
A: Make sure that you have good knives.
