Chef Rick Bayless (maybe you know him as the winner of Top Chef Masters) owns some familiar, highly-acclaimed Mexican restaurants in Chicago, including Frontera Grill and Topolobampo – side-by-side institutions that have earned the James Beard Foundation’s highest achievement for “Outstanding Restaurant.” His wildly popular fast-casual Xoco opened in 2009, and Tortas Frontera at Chicago’s O’Hare airport has changed the face of airport dining. 

Fair to say, a pretty incredible resume. So we were more than a little excited when he agreed to join the Fridge Fam for a beat and create a unique bowl for our menu! In tandem with Chef Rishi Manoj Kumar of Bar Sótano (Bayless’ Oaxacan-inspired mezcal and modern Mexican bar food restaurant), Bayless created a dish inspired by the simple pleasure of a casual, comforting meal in Oaxaca.

Rishi’s journey to Bar Sótano started in Singapore, where a night out eating Mexican food was a rare treat. Those new flavors were enough to spark his culinary curiosity, and he set off to work in high-end kitchens in the south of France and his native Singapore. He later went on to lead Michelin-starred Topolobampo's private dining team, dazzling party guests with his ever-changing menus. Now, he's the Chef de Cuisine at Bar Sótano, creating dynamic new modern menus rooted in Mexican tradition.
