This dish encompasses the simple pleasures of a casual & comforting meal in Oaxaca, featuring chile braised pork in a rustic red sauce, studded with caramelized plantains, black beans, cilantro rice and cheese.
A percentage of proceeds from the sale of this dish will benefit the Frontera Farmer Foundation, a nonprofit organization established by Chef Bayless and his team in 2003, committed to promoting small, sustainable farms serving the Chicago area by providing them with capital development grants.
Chef Bayless is best known for his cooking that embodies his passion for culture, and love of everything that is vivid, bold and spirited. This holds true in the creation of the dish through the unique flavors, bright colors, and Oaxacan inspiration.
